Well, we have a huge glut of raspberries in our garden so I have been looking for different recipes to use them in. These raspberry and apple cupcakes were a real hit with the family and it was a great way of getting my son to eat raspberries without him complaining about the pips !
125g of soft margarine
165g of caster sugar
1 teaspoon of vanilla extract
225 g of self raising flour
125ml of milk
1 large cooking apple (finely chopped)
When they first come out of the oven they will have risen but as they cool they will shrink slightly this is due to the moisture in the cakes which makes them totally delicious.
