Raspberry and apple cupcakes

Raspberry and apple cupcakesWell, we have a huge glut of raspberries in our garden so I have been looking for different recipes to use them in. These raspberry and apple cupcakes were a real hit with the family and it was a great way of getting my son to eat raspberries without him complaining about the pips !

125g of soft margarine
165g of caster sugar
2 eggs
1 teaspoon of vanilla extract
225 g of self raising flour
125ml of milk
1 large cooking apple (finely chopped)

1. Preheat the oven to 180° and line 12 hole cupcake pan with paper cases.
2. Beat margarine, vanilla extract and sugar in a bowl until light and fluffy.

3. Beat in the eggs into the mixture

4. Gently fold in the milk and flour.

5. Finally fold in the raspberries and chopped apple.

6 Divide the mixture into the cupcake cases and bake in the oven for about 30 minutes.

When they first come out of the oven they will have risen but as they cool they will shrink slightly this is due to the moisture in the cakes which makes them totally delicious.
