Homemade tomato soup with sausage and cheese rolls

With Bonfire night fast approaching I thought  I would have a look round for a great warming recipe perfect for standing around watching fireworks. Found this super recipe first posted by BBC Good Food. What could be better than a bowl or mug full of homemade steaming tomato soup and a crusty roll stuffed with cheese and sausages.

Ingredients for the soup
2 tbsp oil
1 onion chopped
1 celery stalk chopped
150g carrots chopped
250g potatoes diced
2 tbsp tomato puree
1 tbsp of sugar
1 tbsp of red wine vinegar
2 x 400g cans of chopped tomatoes
250g passata
1 vegetable stock cube
200ml of milk optional

Ingredients for sausage and cheese rolls
500g pack of bread mix
Oil for greasing
6 -8 large sausages cooked, cooled and chopped into small pieces.
50g of melted garlic butter
200g of cheddar grated.

1. Put the oil, chopped carrots, onion, celery and potatoes into a large saucepan and gently fry until the onions are softened.

2.Add the puree, sugar, vinegar, passata and chopped tomatoes into the saucepan then crumble the stock cube and and add half a pint of boiling water .

3. Cover and simmer for 15-20 minutes or until the potatoes are soft. Then put into a blender and puree until very smooth.

4. To make the sausage and cheese bread first make up the bread mix following the pack instructions, and cook the sausages and leave to cool. Turn out the bread dough onto a floured work surface.

5. Roll out the dough into a rectangle roughly 30cm x50cm, then brush with half of the melted garlic butter.


6. Next scatter over the cut up sausages and grated cheese.

7. Roll the bread into a long Swiss roll shape. Grease a muffin tin with the oil and then cut the Swiss roll into 12 pieces and place in the muffin holes . Brush the remaining garlic butter over the tops of the rolls cover in cling film and leave somewhere warm for the rolls to puff up a little.

8. Place the rolls in a preheated oven 180º and cook for 20-25 minutes until golden brown.

10. Reheat your tomato soup, the soup will be really thick so if you prefer it thinner add the optional 200ml of milk to thin it, serve with warm crusty sausage and cheese rolls. Delicious.
